Cucumber Onion Salad

Ingredients:

  • 2-3 cucumbers
  • 1 onion (red or white)
  • 1 cup vinegar (white or apple cider)
  • 1 cup water
  • ¼ c sugar (more or less to taste)

Directions:

  1. Peel (if desired) and thinly slice the cucumbers
  2. Slice the onions.
  3. Combine water, vinegar and sugar in a bowl with a lid and stir until combined.
  4. Add cucumbers and onions to vinegar mixture and stir.
  5. Place in the fridge for a few hours before eating (less time is ok too!).
