Warm up with Green Curry

As the weather shifts to colder temperatures, you can warm up from the inside out with this delicious Green Curry!

This Green Curry recipe is an excellent option for the cold-weather season. With the curry paste’s combination of warm spices and the sweet complement of coconut milk and brown sugar, you can’t go wrong! Give this recipe a try with any protein of your choice. 

Green Curry 

Ingredients

  • 12 ounces firm tofu (or equivalent protein of your choice) 
  • a swish of olive oil + a sprinkle of salt 
  • 2 sweet potatoes, peeled and cubed 
  • 4 Tbsp. green curry paste  
  • 3 14-ounce cans coconut milk 
  • 3-or-so cups broccoli florets 
  • a handful of chopped fresh cilantro 
  • a handful of golden raisins 
  • 1 tsp. brown sugar to taste 

Directions

  1. Press the tofu with paper towels to remove water. Cut tofu into cubes.
  2. In a large soup pot, heat the olive oil over medium high heat. Add the tofu, sprinkle with salt, and pan fry for 10-15 minutes, until golden brown. Remove and set aside.
  3. Add sweet potatoes, coconut milk, and curry paste to the soup pot. Simmer for 5-10 minutes until potatoes are fork-tender. 
  4. Add broccoli and tofu. Simmer for 3-5 minutes until broccoli is bright green.
  5. Add cilantro, golden raisins, and brown sugar to complete the perfect combination of flavors! Serve over cooked white or brown rice.
